The restaurant launched after BeBe notices that her lunches-Ignacios homemade burritos-were continually going missing at work. She told her co-workers that she'd make them burritos if they paid for ingredients. Soon, she and Ignacio were selling burritos from an ice chest downtown, and eventually into their first location on Fourth Street. Papa Nacho's menu takes root from Mexico, where Ignacio is from, and mixes in flavors from California influence with the Fish Taco Plate ($10.99): fresh tilapia, sauteed veggies, and a secret seasoning, or devour a massive Machaca and Bean Burrito ($7.49) served chimichanga style. And don't miss out on the restaurant's namesake: the Papa Nachos (half, $8.79; full, $10.99), the homemade tortilla chips, beans, green-chile ground beef, cheese, lettuce, tomatoes, onions, jalapenos, sour cream, and guacamole.
The Mexican Restaurant is sandwiched between San Antonio and Paseo Del Norte and because of the hidden location, "People have to know who we are and want to eat here, so we owe all our success to our customer," BeBe says.
